Ahhh pasta!!

Time now for my dinner and well it was a dish taken from another magazine and done in my own way!!

Serves one and you will need...

Free on green(unless you are not counting the veggie parmesan as a HEXA then add 5.5 syns)

Enough pasta for one person
Juice and rind of half a lemon
Half a courgette cut into slices
Handful of baby carrots, cut in half
Yellow pepper cut up into chunks
Some hot veggie stock(about quarter of a pint)
Frozen peas(a goodly amount)
Salt and pepper to season
Fresh basil and chives(though i couldn't find my chives..)
1 oz of veggie parmesan

How to do...

Put the stock, lemon juice and rind along with the carrots, courgette and pepper into a pan and bring to a fast simmer, as you do this make up the past according to instructions

After 5 mins add the peas and carry on cooking.

When the pasta is ready, drain it and add to the veggies and stock mix and serve in a bowl, stir through 1 oz of veggie parmesan and roughly tear some basil on the top and hey presto ready to go!

I followed this with a bowlful of ripe strawberries with a mandarin muller light mixed through very nice!



Pork stir fry from yesterday!

Now the picture below is a pork stir fry!(also serves one)

You will need..
Fry light
1 lean pork steak(all visible fat removed)
Soya sauce
1 egg
Pack of stir fry veggies ( I used asda one with edame beans in it om nom nom nom though this wouldn't make it free on original)
Half a teaspoon of honey (1/2 syn i do believe)
Fresh coriander
Spring onions (2)
1 garlic clove chopped
Small piece of ginger cut up into match sticks
1 red chilli (seeds in or out depending on your taste)
1 tablespoon of orange juice(fresh) (that's like 0.25 of a syn!)

Cut the pork into thin strips and cut and prepare the chilli, ginger, garlic and spring onion. Then mix the honey, about a tablespoon of Soya sauce and the orange juice together.

Next beat the egg and add a dash of soya sauce in there and now your ready to start!

Cover the bottom of a frying pan(or non stick) in a few spays of frylight and leave to heat till nice and hot. Next pour the egg mix in the pan, as the underside sets, sprinkle on a good handful of fresh, chopped coriander, quickly turn the omelette over and cook for another 30 secs, lift out the pan and put to the side until later.

Get a wok and heat up to a medium heat and give it a few sprays of fry light. Put the chilli, garlic, ginger and spring onions in and cook for a few mins, next add the pork and keep the contents moving until the pork has taken on some colour.

Next throw in the stir fry veggies and cook rapidly, once the veggies have cooked add in the, orange juice mixture and, give it all a good shake and stir!

Take the omelette and roll it up and cut it into thin ribbons and add to the wok, turn out and serve!


Also i got this recipe from the slimming world mag, slightly different as, 1 i dislike mushrooms and they make me very ill and 2 didn't have water chestnuts(ok i forgot to pick them up)
